Simple & Cozy soups for winter

As the cold days set in, there's nothing quite like a hot bowl of soup to warm you up. Today, I'm excited to share two delicious soup recipes that have become my go-to comfort meals during the cold weather the last couple of weeks. These recipes are not only packed with hearty ingredients but are also super easy to prepare, making them perfect for a cozy night in!

Sweet Potato, Kale, & Chickpea Soup

Ingredients:

  • 1 large sweet potato, peeled & cubed

  • 1/2 cup of sweet red peppers, chopped

  • 1 cup of chickpeas

  • 1/2 cup of onion, chopped

  • 1.5 cups of kale, chopped

  • 2 garlic cloves, chopped

  • 1.5 tbsp Veggie Bullion

  • 5 cups of water

  • Olive oil

  • Seasonings: salt, pepper, umami seasoning from Trader Joe's

  • Shredded parmesan for topping

Instructions:

  1. Sauté garlic and onion in olive oil until the onions turn glossy.

  2. Add in sweet red peppers and 1 cup of water. Cover and steam for 5 minutes.

  3. Season with salt, pepper, and umami seasoning.

  4. Add chickpeas, sweet potato, veggie bullion, and water.

  5. Simmer over medium heat for 30 minutes.

  6. About 5 minutes before serving, add in the chopped kale.

  7. Top with shredded parmesan and enjoy this hearty and nutritious soup.

Veggie potato soup

Ingredients:

  • 2 cups of potatoes, cubed

  • 1 cup of carrots, chopped

  • 1 cup of broccoli, chopped

  • 1 cup of chickpeas

  • 1/2 cup of onion, chopped

  • 2 garlic cloves, minced

  • 1.5 tbsp Veggie Bullion

  • 5 cups of water

  • Olive oil

  • seasonings: Salt, pepper, umami seasoning from Trader Joe's

Instructions:

  1. Sauté garlic and onion in olive oil until the onions turn glossy.

  2. Add in carrots, broccoli, and 1 cup of water. Cover and steam for 5 minutes.

  3. Season with salt, pepper, and umami seasoning.

  4. Add chickpeas, potatoes, veggie bullion, and water.

  5. Simmer over medium heat for 30 minutes.

  6. Serve and savor the comforting flavors of this potato and veggie soup.


These soup recipes have become my winter staples, providing warmth, nourishment, and a burst of flavors during the colder months.
